		<description><![CDATA[I think this mineral water has been on our shelves for decades already. I only realize it these few days when I was looking for some glass bottles. Surprisingly, the mineral water is kept in a green glass bottle which is weird since most of the mineral water we have in Singapore are stored in plastic bottles. Perhaps that it why this mineral water is more expensive. And it is from China. They label it as &#8220;Alkaline Mineral Water&#8221;. I had thought that most mineral waters should be relatively neutral compared to the rest of the drinks we have. But if it is truly alkaline, then it is good since most of the foodstuff we eat nowadays are often too acidic in the body. It is definitely better to have some balance when it comes to the food we consume. One bottle is about 75 cents and contains about 270ml of alkaline mineral water. The water is good for making beer since it contains a good amount of minerals for active fermentation. Never use distilled water to make your beer or you will find your fermentation lacking. Nice? One green bottle of the Laoshan Akaline Mineral Water. From some old mountain in Qingdao or something. Hopefully it is not just plain water or something. You will never know from all these China made products. Kind of scared after that milk incident a while back. Hopefully they have improved their standard and quality now. Okay, Laoshan Alkaline mineral water is a pleasant table water, bottled from the spring of the famous Mount Laoshan and contains various kinds of mineral elements, with a tradition of quality since 1905. Great. And it might just be what I need for my mead as well. The problem with making mead is that honey lacks the nutrients the yeasts need for a good fermentation (and hence a good tasting mead). Helping them out by using mineral water should produce a better mead. I hope. Some mineral contents. And the name of the importer. Fu Shan Yuan Enterprises. The importer in Malaysia. 		<description><![CDATA[You can find this at Shop N Save or Cold Storage. First Choice is the house brand for Cold Storage. I don&#8217;t have all the figures with me but I really doubt that those &#8220;house brands&#8221; are cheaper than the other brands. In fact, I saw a few brands that was cheaper than the house brands. A while back, the government kept on telling Singaporeans to buy the house brands because they are cheaper. Well, probably these elite people never buy anything from supermarkets before so they have no idea it could be more expensive. If you are on a budget, it would be wise to compare prices first before you buy. House brands does not mean it is cheaper. Anyway, as usual, I bought this to make some wine.  Peach wine to be exact. I couldn&#8217;t find any source for just pure peach juice, this is the closest I can get. It contains grape juice as well. I am guessing peach does not have enough &#8220;juice&#8221; to make it worth juicing, so they add some grape juice to the mix. And surprising, the peach juice smells pretty nice. I open the pack and the entire kitchen smells of delicious peaches! There you have it &#8211; a litre pack of Grape &#38; Peach juice. 100% fruit juice. One litre of juice. Made from concentrate. I believe they are talking about the grape juice &#8211; it is made from concentrate. As for the peach, it is made partly from peach Puree as well as peach concentrate. Smells wonderful. It is no wonder kids love the smell of peaches. Even the Presidents of the United States love peaches. The ingredients are grape juice (concentrate), peach puree &#38; peach juice (concentrate). Nothing else. No flavourings, no colouring and no preservatives. If you want to make wine, you will have to ensure that there is no preservatives or the fermentation will most likely fail. Remember, preservatives will kill off the yeast before it can ferment the sugars to alcohol. Some nutritional information for you. Remember to always refrigerate after opening and consume within 5 days. One of my friends told me that since the due date for this kind of UHT is rather long,  it should be safe to consume even after a few weeks. I told him to wake up his idea. Once opened, you should consume the juice very soon. Made in Hong Kong. I didn&#8217;t even know that Hong Kong has  factories. Everytime I go there, all I spot are shopping malls and shops and eating. And surprisingly you can hardly see any fat people in Hong Kong. Why? 		<description><![CDATA[Seems only available at Cold Storage. Can&#8217;t find it anywhere else, not even at our NTUC Finest stores. In fact I can&#8217;t find any juice concentrates without any preservatives anywhere else in Singapore. Seems that most juice concentrates here are either full of preservatives or they are just flavoured juices, which I don&#8217;t want. I need something made from real fruit juices &#8211; it taste better and it can be used to make alcoholic beverages. Preservatives will kill off the yeasts before it can even start producing alcohol. Anyway this apple juice concentrate is to be made either into a Apple Wine or a Apple Mead. I haven&#8217;t decided yet.  I read that apples and honey goes pretty well, so it would be a good choice to make Apple Mead. Or I could use it to make Apple Wine &#8211; I would need maybe 2-3 cans of this concentrate to make an acceptable Apple Juice. If I dilute it according to directions, it would just be Apple Cider which has a lower alcohol content. I have tried making Apple Cider before (7% alcohol) and it didn&#8217;t turn out great. Not to mention, it has this sour aftertaste perhaps due to the cheap juice available in Singapore. Most of my friends don&#8217;t like that. One can of Tree Top Apple Juice Concentrate. I think this brand is very popular in the United States. Reading through all the homebrew websites, it seems that this Tree Top brand is one of the leading apple juice retailers there. 100% Apple Juice Frozen Concentrate. Nice. 120% vitamin C per serving. Again nice. 355ml makes 1.47l, so it is about 1 part concentrate to 3 part water. Okay lah, cost is about S$3.60. I am sure it is much much cheaper in the United States, here Cold Storage want to make money mah. Another view. Real Fruit from real people, as opposed to aliens and fake fruits like bananas. Some nutritional information. The ingredients are apple juice concentrate and ascorbic acid (vitamin c). Nice and short ingredients list, something I really like. These days it is hard to find ingredients list which are short anymore. Mostly you will see tons of unknown chemicals or what-not in the ingredients list. Yucks. Chemicals I hate them so. Don&#8217;t know why would anyone want to consume them. Keep frozen until ready to use. 		<description><![CDATA[Enzymes drink is somewhat an unique &#8220;drink&#8221; made primarily in the South East Asia region, mostly in Malaysia and Singapore. And usually by the Chinese. The concept is just like making wine (from fruits) just that instead of the yeast converting the sugars, it is the bacteria (good bacteria that is in the fruits themselves) that is doing that conversion. So instead of making wine, you get enzymes drinks which contains lactic (among others) acid. That is why a supposedly good enzymes drink should be slightly sour. Making enzymes drinks is fun, fulfilling and if I am not wrong, it is very &#8220;probiotic&#8221; as well. But honestly, unless there are more research on this, I doubt the heralded health effects of enzymes drinks. Anyway, the main idea behind making enzymes drinks is to allow the bacteria in the fruits to ferment the sugars. There are always other competing micro-organisms like yeast, mold and even other (bad?) bacteria. So what you should do is to create an environment where other competing micro-organisms (especially the mold and yeast) cannot thrive. Fruits contain naturally occurring mold and yeast (and bacteria), there is nothing you can do about that. What you can do is to create the necessary environment for the bacteria to outgrow the other micro-organisms. Take a page from those French bakers who harvest yeast from raisins, you can use the same idea to &#8220;harvest&#8221; bacteria from fruits. 1. Sugar. Adding sugar is important. Do not skip this step. A lot of people who make enzymes drinks are health conscious and they tend to think that sugar (table sugar aka sucrose) is bad for them, without actually knowing why. So they just skip adding sugar. Honestly, table sugar isn&#8217;t that bad. In fact, many of the fruits and honey which people tend to substitute for sugar have sucrose in them as well. However, it is the lack of other nutrients in table sugar that is the problem. And in the case of making enzymes drinks, sugar acts as a preservative and a food source for the bacteria. Bacteria eats the sugar and converts them to acid while producing enzymes. And yes, sugar is a preservative &#8211; many of the dried foods we consume contains sugar to preserve them. If you don&#8217;t add the sugar (or not enough of the sugar), yeast or mold might take over. It is like rotten fruit. The trick here is to add the correct amount of sugar to help encourage (good) bacteria growth while discouraging yeast and mold growth. For high water content fruits (like water melon), add more sugar. For low water content fruits (like bananas), add less sugar. 2. Types of sugar. I usually use light or dark brown sugar to make my enzymes drinks. Table sugar is okay but dark brown sugar adds some flavour (molasses) to the drink. 		<description><![CDATA[Well, I have been making Soy Yogurt so it is time for me to go look for some good quality Soya (or Soy) milk. Or at least check out what brands there are in the local supermarket and perhaps try them all out. The fun part is experimenting isn&#8217;t it? Finding the best soya milk to make the best Soy yogurt. But as I said before, I am not a fan of unfermented soy products like soy milk &#8211; health wise. I am just not convinced of the health benefits of consuming unfermented soy products. But once it is fermented, I think it should be much better. But of course, probably need to read up more to be sure. And literature on the health benefits of Soy yogurt seems to be seriously lacking. Most of them will say that it is some sort of miracle food but that is most likely hype. Anyway, I bought this SYO Soya Milk from Sheng Siong. If I remembered correctly, it is for 60 cents per pack. Considering what Mr Bean is selling outside, pretty cheap. But then honestly, soya beans are very very cheap. I think Mr Bean&#8217;s prices are just outrageous. But then most prices of food in Singapore are outrageous as well. Yes, a little pouch of Soya Milk. Another view. Yes, no preservatives. That is one of the reasons why I bought this. Several brands of Soya milk in the supermarkets seemed to have some sort of preservatives in their ingredients list &#8211; those will probably not work when you are doing fermentation. The part where you have to tear of is a hassle. It requires a lot of strength to tear of the corner &#8211; probably because the pouch is made up of very thick plastic. A good thing but you will need a lot of patience to rip the corner off though. And if you are into drinking Soya milk, this comes with a straw so you can drink it on the go. Here we have the ingredients list &#8211; Non-GMO soya beans, water and calcium. Another reason why I chose this brand is because of the short ingredients list. Just soya beans, water and whatever calcium. And check it out &#8211; Non-GMO which is certainly good. This Soya Milk is manufactured by this Meng Chuan Food Manufacturing in Singapore. How many Singapore manufacturers do you see nowadays? It is like rare. By the way, you should shake well before serving. Expiry date is just 3 weeks. This is a good thing since it does not contain preservatives or they are like Ultra Heat Treated which might not be that healthy. Product of Singapore!! You should store this Soya milk at 2 degrees to 7 degrees. 388ml of Soya milk. This product can be heated in boiling water or the microwave but I don&#8217;t want why you would want to do it. During my Soya milk drinking days, a cold cup of Soya Milk is definitely more delicious...]]></description>

		<description><![CDATA[Found this at Sheng Siong. And by the way, did you go Sheng Siong went public a while back? Probably why they brought in so many different brands of foodstuff these few months. Anyway, I hope that you are not expecting good stuff to come from Sheng Siong going public right? You do know that usually once such companies go public, the quality of their foodstuff and groceries drop and the prices rise right? That is my experience anyway. Hope that it will not come true, but honestly I don&#8217;t have much hope at all. And not to mention, some of the stuff Sheng Siong sells aren&#8217;t exactly cheap already. In fact, some of the foodstuff can be more expensive than even NTUC or Cold Storage. Not all, but some. But seriously, competition is good for us consumers. Thank the gods that the supermarket industry in Singapore has a lot of major players instead of just one. Okay, now back to the drink. This is some sort of fruit juice drink. It is a mix of Aloe, Pomelo, Pink Grapefruit &#38; Lemon. Comes in a green plastic bottle. Nothing spectacular about the packaging too. It is called Alo Appeal. Here you have the bottle I bought. They have many other flavours which I hope to  try out some day. It cost S$2 per 500ml bottle. Not exactly cheap but still acceptable. Check it out &#8211; Aloe + Pomelo + Pink Grapefruit + Lemon. No preservatives. No artificial colours. No artificial flavours. They are committed to bringing you deliciously refreshing drinks to support your healthy lifestyle. 		<description><![CDATA[Did I mention that I love chocolate? I don&#8217;t know why it is exactly, but I love the taste of slightly bitter chocolate.  I love it when the chocolate melts in my mouth and the flavours come bursting through with complexity not found in any other confectioneries. I am pretty sure that there are a lot of people out there who loves chocolates as well. And as the increased number of dark chocolates available in our supermarkets suggests, more and more consumers are into the complexity of dark chocolate rather than the white (or even milk) chocolate, which tastes more like sweeten milk than anything else. Chocolates should have this &#8220;chocolaty&#8221; taste that lingers, without too much sweetness. Anyway, I bought this Hershey&#8217;s Cocoa Powder at Sheng Siong.  You should be able to find them in the baking section of most supermarkets. No, I didn&#8217;t buy this to bake a chocolate cake but to make myself hot chocolate drinks. Been keen to try how real hot chocolate tastes like since my trip to New Zealand a while back. They really can make a mean cup of cocoa in kiwiland. Note that this is natural unsweetened cocoa powder. It is very bitter with no sweetness at all but it has the deep strong chocolate flavour which I desire. Natural unsweetened cocoa powder is made from roasted cocoa beans which have been milled to powder. The dark box of natural unsweetened Hershey&#8217;s Cocoa powder. Mysterious thing. Wow, since 1894! And who is the little baby in the cocoa bean? Anyone planning to make a chocolate cake? You can try out Hershey&#8217;s &#8220;perfectly chocolate&#8221; chocolate cake. Doesn&#8217;t look too difficult doesn&#8217;t it? And you can also make &#8220;perfectly chocolate&#8221; chocolate frosting for all kinds of occasions. There is no limit to what celebration you bring chocolate cakes to.  Another interesting tip &#8211; how to convert Hershey&#8217;s Cocoa to baking chocolate. And this Hershey character has been supporting schools. Good for him. Here they explain to you the &#8220;baby in the bean&#8221; logo. And yes, this is the recipe I am looking for &#8211; a perfectly chocolate hot cocoa. It requires 2 tablespoon of sugar and Hershey&#8217;s cocoa with a little salt and vanilla extract. Then microwave one cup of milk in the microwave at high. Add the cocoa mixture to the how milk and stir till completely dissolved. After that add in the vanilla extract. You should not add the vanilla extract too soon because the flavour will be destroyed in all those heat. I did make myself one cup without the Vanilla extract. Couldn&#8217;t find it in my kitchen. But the taste was wonderful. The chocolate factor was quite good. Would be even better if the weather was colder. What is better than a cup of hot chocolate when it is cold eh? 		<description><![CDATA[I have no idea why they call it Dragon Well.  Might be the name came from some Chinese legend or something. That is not important. What is important is the taste of this green tea. I have heard a lot of good things regarding this type of green tea. It is supposed to be the highest grade of green tea available as the taste of the resulting brew is just heavenly. And for someone who have been drinking tea for the past few years, I have to agree &#8211; LongJing Green Tea indeed is one of the finest teas I ever tasted. And just after you pour the hot water onto the tea leaves, take but a moment to smell the tea. You will find the wonderful slightly roasted aroma coming out of the tea. I guess for non-drinkers, this might not mean anything. But for us tea drinkers, the aroma coming from the brew adds significantly to the taste of the tea. And that is one of the main reasons why tea is such a popular beverage. Not surprisingly however, tea (green, black, oolong or white) is not a popular beverage in Singapore. Other than the morning cup of that disgusting tea dust or that sugar infused bubble tea, most of us Singaporeans never even touch real tea in our lives. You have no idea what you are missing! Anyway, I bought this LongJin Green Tea from eBay. If I remembered correctly, it cost about US$10 per 100g pack. All-in-all, it took about 2 weeks to arrive from China. A while back during Chinese New Year I bought some stuff from China, it took about 6 weeks to arrive to Singapore. I guess the shipping service in China isn&#8217;t that good. Items I bought from Korea will usually take about 1 week to arrive. The 100g pack of LongJin Green Tea. 100g. If only picking tea leaves was as glamorous as implicated in the photos, I would be heading to China myself to pick tea leaves. Check out the tea leaves. Produces a slightly yellowish extremely tasty brew. Surprisingly the leaves will balloon up like 3-4 fold after soaking in the water for a while.  If I am not wrong, this tea is from HangZhou province. One of the reasons why I choose loose leaves is because we can easily shot the quality of the tea. If they are in a tea bag, there is no way for you to see the leaves. So you will not have any idea on the quality. The big words are &#8220;Dragon Well&#8221; or LongJing. The rest I have no idea. Must be something not important. Back of the pack. 		<description><![CDATA[Auntie Izumi is who? And what does this Japanese lady got to do with apples? I have no idea.  I am betting that even the manufacturer of this pack of apple juice has no idea too. Anyway, I have been visiting the supermarkets again later &#8211; mostly to escape the Singapore heat &#8211; but I have discovered several new brands coming into the market. But since it is from Pokka, I would not really consider this as a &#8220;new&#8221; brand. Pokka does have a variety of other fruit juices but at least this is something new. And I am not really a fan of from concentrates fruit juices, the quality of the juice has been damaged due to the heating process and that is probably why they have to add Vitamin C back into the juice again. And god knows what other nutrients and vitamins are destroyed during that high heat. Of course, the taste will also be affected. The sugars in the apple juice will be damaged as well. I bought this pack from Sheng Siong. It was on promotion and was heavily advertised there. The Pokka Auntie Izumi Apple Juice. 100% juice. Look at how juicy the apple is! And Auntie got a flower. Check it out &#8211; no sugar added and is rich in Vitamin C. I am trying very hard to cut down my intake of sugar in my diet so this is good for me. Premium Japanese quality juice. No colouring and no preservatives! Oh this is how Auntie Izumi looks like. Actually Looks more like a dutch milk lady than a Japanese one. The ingredients are water, apple juice concentrate, ascorbic acid and flavouring. Sad that they have to add flavouring into the juice. See what I told you about using concentrates and the affects on the taste.  They had to add flavourings to make it even taste something resembling apple juice! The ascorbic acid is your Vitamin C.  It would be better if the ingredients are merely just apple juice. 		<description><![CDATA[Have you guys ever drank Orange Julius before? When I was young, I used to drink Orange Julius right in front of the Capitol Cinema. Their store is usually stacked full of fake oranges and the original Orange Julius drink is oh so wonderful. Basically it is a mix of orange juice, milk and some vanilla blended together to become some sort of smoothie. It is just heaven if drank on a hot afternoon. And what they have is the perfect mix. Orange juice is kind of sour, you will need to add sugar to counter the excessive tartness but then it becomes just a bit sickly sweet. So what better way to counter the sweetness than to add some milk? This way, you get a very creamy mix of orange and milk that makes the smoothie taste like heaven. That got me thinking, I do like milk and fruit juice is kind of healthy. So why not create a Orange Julius clone of mine.? And me being a lazy bum, it has to be simple enough for me to do it often. Yes, you know me, I am very lazy. Well, my recipe is pretty simple. Requires nothing but orange juice and full cream milk. You don&#8217;t need to blend them or add ice cubes like the original recipe. All you need is 2 parts of orange juice and 1 part of milk. Put them in a cover-able container and shake the hell out of it. What you get is a semi-creamy Orange Julius clone. Yes, it is not prefect, but it is easy to do. And inexpensive as well. Milk and orange juice don&#8217;t cost a lot in Singapore. However, you will need to make sure that they are cold when you serve them. It does really make a difference. The full cream milk is important as well. If you use them low fat milk, you won&#8217;t get the creamy texture that makes the drink enjoyable. Fattening? Not really. Unless you are planning to drink like 10 cups per day. And please, full cream milk is healthy, if drank in moderation. Anyway, I find the taste delightful. I don&#8217;t really like those store bought orange juice. This is a good way to add more fruit juice into my diet. And for those who don&#8217;t like drinking milk, this actually can help you overcome the &#8220;weird&#8221; taste of milk. Even my mother says it is quite nice. Old folks don&#8217;t like milk.
