They should work as water kefir but from what I read, it will stop growing. My suggestion is to get the real sugar water kefir grains.

Thank you so much for the kefir grains which I received yesterday! I’m very grateful for your generosity.
I tried making some last night, i added about 600 ml milk (slightly more than half of a standard carton) to the grains and fermented for close to 24 hours. I’ve just drained the grains and started another batch. The consistency is nice and creamy, thicker than milk and like a yoghurt drink. But the taste is like what I’d expect from spoilt milk, very sour and rather unpleasant if you’re not used to it. Is this normal? Should i try fermenting for a shorter time, or using more milk? I’ve read some instructions online, but they are mostly US based, i suppose quantities and times may be quite different in our climate?

Hi Asanthi, yes, kefir should taste sour… but 24 hrs is a bit too long for Singapore weather, I suggest you do it 12 hrs instead, eg. prepare in the nite & drink it the next morning… see if the taste is less sour… 600ml for a start should be fine… kefir & milk proportion should be abt 1:10 times.

I have been using kefir for two years in the states with fantastic results: For those of you who are not sure about the taste, try my morning smoothie recipe:
1 cup of kefir
1 banana
2-3 frozen strawberries
1 tsp of honey or sweetener to taste (may not be necessary if you do not let the kefir ripen so long)
(Opt: vanilla whey protein powder–eliminate the sweetener)
Use a personal blender like the Tri-best 220v or Magic bullet if you are a place that uses 110v to make individual servings of the frozen treat.
With the protein powder additive, I can go hours before eating again.
I also use this drink with more frozen fruit as a substitute for the evening ice cream cravings.
I have mixed different fruit and/ or ice cubes. I am addicted to the stuff. It is high in the B complex vitamins. I have noticed that I no longer have chocolate cravings, have no lactose intolerance with kefir that I do with regular milk, and the list of benefits goes on and on.
Personally, now living in Malaysia with a warmer climate, I culture my Kefir for 12-24 hours and rotate it out and put the strained portion in the refrigerator. It actually continues to thicken in the refrigerator but at a slower rate. So at 7 AM, I use the cold kefir for my smoothie, and strain out the new kefir and put it in the refrigerator. It depends on the temperature of your house. We tend to use a bit more air con than some. If you are going to be gone for a few days, put the jar in the refrigerator.
